Si presenta all’occhio di un bel giallo paglierino, con perlage fine e persistente. Iniziali sentori di frutta a polpa bianca, sono seguiti da richiami al lievito e alla crosta di pane. Il sorso è fresco e fine, caratterizzato da una gradevole nota minerale. Buona la lunghezza.

Di fatto è un Blanc de Blancs, questo Champagne Extra Brut “Fleur de Craie” prodotto da Barrat-Masson. Una bollicina ottenuta con uve di chardonnay vinificate in purezza, e lasciato riposare sui propri lieviti in bottiglia per almeno trenta mesi. Prodotto a tiratura limitata, è uno Champagne la cui composizione vede un 20% vinificato in barrique e il restante 80% vinificato in acciaio. È una bollicina che lascia pienamente soddisfatti.
