Though it can be tougher than other cuts, this 3 lb cut delivers unbeatable flavor, especially when cooked properly. Skirt steak is the go-to cut for fajitas and can also shine in dishes like Mexican arrachera, carne asada, or Chinese stir-fry. While often confused with flank steak, the two are quite different – skirt steak is prized for its rich beefy flavor and tenderness when cooked over high heat.

Unlike flank steak, the skirt steak doesn’t require marinating. A simple seasoning of salt is all you need to bring out its natural taste.
