De druiven (uitsluitend van eigen teelt) worden overrijp geplukt, die rijpheid proef je terug in de wijnen. Verder wordt er zo natuurlijk mogelijk gewerkt, zonder enige manipulatie: geen sulfiet toegevoegd en zuiver natuurlijke, op de druif zelf aanwezige, gisten. De wijnen van Christian Binner zijn stuk voor stuk prachtige natuurwijnen met diepte, complexiteit, maar vooral een vrolijke lichtvoetigheid. 

 Saveurs mag je dan ook precies nemen zoals het is. Een blend van de mooiste druiven die de Elzas te bieden heeft en een smaakbom van fruit, mooie zuren, bloemig en toch peperig en hier en hier daar wat associaties van vlierbloesem. Ongefilterd, zonder toevoeging van sulfiet en puur, puur sap. 

Zowel 2020 als 2021 waren beide extreme jaren wat betreft het weer, allebei compleet aan de andere kant van het spectrum. Christian heeft om die reden druiven uit beide jaren gecombineerd om zo zijn wijn zowel in evenwicht te brengen als spanning te creëren. Prima gelukt zou ik zo zeggen. 

In Ammerschwier, hartje Elzas, vind je biologisch dynamische wijnboer Christian Binner. De kunst van het wijn maken wordt hier op dit domein al sinds 1770 doorgegeven van vader op zoon. Joseph, Christians vader, die de opkomst van de chemie en geatomiseerde landbouw meemaakte, is altijd zijn land blijven omploegen en het land enkel biologisch blijven verbouwen. Christian zelf heeft dat met zijn overnname alleen maar verder doorgezet. Onder invloed van Christian kwam er zelfs 4ha aan hectare bij, kocht hij verschillende percelen op grand cru's en liet hij een nieuwe, bioklimatische wijnkelder bouwen van natuurlijke materialen uit de omgeving. 

In 2016 begon Christian aan een nieuw project, geleid door een idee van 'degrowth', besloot hij een groot deel van zijn wijnstokken te verhuren, om zich beter te kunnen focussen op die van de heuvels en de grands crus. Hermetisch afgesloten in de nieuwe kelder, kunnen de wijnen zich nu 1 tot 3 jaar ontwikkelen, geheel op eigen tempo. Volgens Christian is het aan de wijnboer en zijn team om juist te accepteren dat er minder gedaan moet worden in plaats van meer, met een welwillende blik, klaar om in te grijpen indien nodig, om zo, betere wijnen te maken. Kwaliteit over kwantiteit, uiteraard een opvatting waar alle biodynamsiche boeren zich in kunnen vinden, maar waar bij Christian deze filosofie in elk gebaar en elke beslissing terug te vinden is. 

Met deze rust, dit geduld, weet Christian nu al 20 jaar prachtige wijnen te creëren, vrij van sulfieten en chemicaliën, volledig biodynamisch geteeld, die brandschoon en zeer stabiel zijn met de tijd, alleen maar mooier zullen worden.
