Slechts 1 hectare aan wijngaarden hebben Jean en dochter Agnes Foillard in Fleurie, stokken van 45-50 jaar oud. Minder schist als ondergrond en meer roze zandsteen. De wijnen zijn wel in de stijl van Foillard, gestructureerd, fluweel, tikje sinaasappelzeste, roze peper, 'jammy' en mooie zuren.

De Bende zonder Sulfiet, ookwel de Bende van 4 genoemd (sommige mensen noemen het de Bende van 5 of zelfs 6, afhankelijk aan wie je het vraagt), bestaat uit Jean Foillard, Marcel Lapierre, Guy Breton en Jean-Paul Thévenet. Deze pioniers/vrienden zijn volgelingen van Jules Chauvet, en zijn midden jaren ’80 begonnen met natuurwijnen produceren in Beaujolais. Zo eerlijk en puur mogelijk.

Wijn maken van oude druivenstokken, geen chemische pesticiden gebruiken, laat plukken, goede sortering van de druiven, geen chaptalisatie, geen filtratie, geen additieven en minimaal of helemaal geen sulfiet toevoegen. De stijl van Jean Foillard staat haaks op de vele tutti frutti Beaujolais (Primeur) wijnen die naar bubbelgum en banaan smaken. De wijnen van Jean Foillard zijn kenmerkend door een volle elegante stijl van Gamay. Schoon, diepe structuur, complex en toch zijdezacht. Eerder vergelijkbaar met een klasse Bourgogne Pinot Noir.

In 1980 nam Jean Foillard het domein over van zijn vader. De meeste wijngaarden van Foillard liggen op de beroemde heuvel Côte du Py en is de trots van Morgon. De bodem van Côte du Py bevatten graniet en ‘schist’.

The product description says it’s designed to prevent mess with stable low-RPM operation, and that’s true if you stay on the lower settings—but once you ramp it up, you really need to keep the whisk fully submerged or start slow, or it can send milk flying out of the container
