Al palato si rivela di buon corpo, piacevolmente minerale e armonico.Il Salento Fiano IGT "Mezzogiorno" di Morella nasce a partire da una selezione di due vecchie vigne di fiano provenienti dalla Campania e, poi, innestate a Manduria, su suoli di terra rossa, con substrato di roccia calcarea e quarzo. Fermentato in parte in tonneaux da 500 litri e in parte in acciaio e lasciato affinare per 7 mesi, è un bianco articolato e ricco di sfumature, decisamente eloquente.
Ottimo in abbinamento al pesce, è da provare con le fritture e i crostacei.
