All’esame visivo si annuncia con un colore tipicamente rubino, dotato di una bella concentrazione e intensità. Al naso le note floreali sono espressive e attraenti, arricchite da sensazioni che richiamano il tabacco e le erbe essiccate. All’assaggio è di buon corpo, con un tannino quasi masticabile e un’acidità spiccata, molto incisiva al palato.

Per tutti coloro che sono desiderosi di conoscere i vitigni autoctoni dell’Etna, la cantina Girolamo Russo è una di quelle realtà che non si possono non conoscere. Siamo infatti di fronte a un’azienda che oramai è diventata punto di riferimento per l’enologia siciliana, e che nel giro di poco più di dieci anni è riuscita a compiere un lavoro di valorizzazione del territorio incredibile. In questo “San Lorenzo”, Rosso DOC dove nerello mascalese e nerello cappuccio si amalgamano alla perfezione, scopriamo un ventaglio aromatico potente ed elegante al contempo, preludio di un sorso caloroso e fasciante. Le uve vengono coltivate con principi di agricoltura biologica, e dopo la pressatura il mosto fermenta spontaneamente in acciaio, macerando sulle bucce per 13 giorni. L’affinamento successivo ha una durata di 20 mesi, e si svolge in barrique di legno francese. Una bottiglia che ha bisogno di tempo per sviluppare il proprio carattere, da acquistare oggi per dimenticarla in cantina per 4 o 5 anni: il risultato vi lascerà a bocca aperta.

E’ un vino naturalmente indicato per accompagnare carni rosse, cucinate con diverse preparazioni. Da provare anche con primi piatti a base di sughi strutturati, come le pappardelle al ragù di lepre.

Small, works with (some) induction units, just what I needed.

It's small and the good thing about it is that it works with my induction (Nuwave Flex Precision, 1,300W.) Not perfectly, but will work. It doesn't work with my larger Duxtop (9600LS/BT-200DZ, 1,800W) because it is looking for more metal to sense before it can trigger the induction function. So, if you have a smaller induction unit it might work. If not, get a CozyKit 5.5" induction diffuser (on Amazon) and heat it up on that via induction. That diffuser should work on any induction unit.
