In bocca, pur mostrando la sapidità e la verticalità del lugana, mostra un corpo importante che riesce ad equilibrare ed armonizzare ogni parte, regalando una beva convincente dotata di lunga persistenza finale.Questo vino così strutturato nasce da diverse componenti: la prima è una leggera surmaturazione in pianta delluva, che conferisce una maggiore morbidezza. Inoltre un lungo affinamento sulle fecce nobili e un altrettanto lungo periodo di permanenza in bottiglia prima di venire commercializzato fanno sì che il Lugana DOC Demesse Vecchie della Famiglia Olivini sia rotondo e morbido, senza per questo venire meno ai tratti caratteristici del lugana.
Un vino che grazie a un corpo deciso riesce ad essere abbinato a tutte le tipologie e preparazioni di pesce e secondi piatti di carne bianca. Interessante anche con formaggi a pasta dura non particolarmente sapidi e strutturati.
