Genmai miso (ongepasteuriseerd) is een gemiddeld krachtige Japanse smaakmaker die op traditionele wijze gemaakt wordt van gefermenteerde sojabonen en ongepolijste bruine rijst. Fermentatieperiode: minimaal 12 maanden.
