Deze alcoholvrije tempranillo biedt aroma’s van rood fruit, koffie, vanille, zoethout en kruiden. In de mond is de wijn sappig, met rijpe tannines en een kruidige afdronk.

Vinificatie
Deze tempranillo heeft 12 maanden gerijpt op Amerikaans eiken. De alcohol wordt d.m.v. van vacuüm aan de wijn onttrokken. De alcoholhoudende wijn wordt in een soort kolom van trechters geschonken. De wijn sijpelt de wijn steeds een trechter verder naar beneden terwijl de alcohol naar boven stijgt alwaar het wordt opgevangen en gescheiden van de wijn. Dit proces wordt een aantal keer herhaald totdat alle alcohol uit de wijn is verdwenen en er onderin de kolom alcoholvrije wijn overblijft. Dit proces vindt plaats op een relatief lage temperatuur van 32 °C. Hierdoor blijft ook zonder de alcohol de smaak van de wijn goed behouden.

Bodegas Matarromera is lang bezig geweest om hun Win te vervolmaken: maar liefst 10 jaar. Inmiddels hebben ze speciale wijngaarden aangeplant, waarvan de druiven alleen voor de alcoholvrije wijn worden gebruikt. Het resultaat is een reeks heerlijk verfrissende dranken, rood, wit én mousserend, gemaakt van gedealcoholiseerde wijn. Bovendien bevat Win minder calorieën dan wijn: Win -Win dus!

Tempranillo
Tempranillo is met afstand het belangrijkste en bekendste druivenras van Spanje. Er staat ruim 200.000 hectare van aangeplant en hij is in vrijwel het hele land te vinden. De naam verwijst naar de vroege rijping van het ras: ‘temprano’ betekent vroeg en ‘tempranillo’ is het verkleinwoord, letterlijk vertaald ‘het vroegertje’.
