Recipes to savour include moreish favourites such as their multi-award-winning Buffalo Hot Sauce, Korean 'Seoulja' Boi Wings with fermented black bean, pineapple, and black sesame, Jamaican'Me Crazy Wings made firey with Scotch bonnet chillies, and the 'Szech-One' coated in five spice and Szechuan salt.
Other chapters offer ways to make use of the other parts of a chicken so as to avoid waste – you'll find 24-hour Tea-brined Whole Chicken, and recipes using the thighs and drumsticks. About the Authors
David Turofsky and Ben Ford are the flavour- and food-obsessed duo behind Wingmans. They set up a street food stall in 2015 and have since gone on to win multiple UK and EU awards. They have built up a cult following through iconic partnerships and appearances including a collaboration with the Gordon Ramsay Group at Bread Street Kitchen, and as annual wing provider for the NFL International Series at Wembley and Twickenham. They also regularly pop up at Glastonbury, British Summer Time, Big Feastival, Winter Wonderland, Notting Hill Carnival, Taste of London and Standon Calling. They opened the UK's first 'Authentic Wingery' - Wingmans - in Kilburn in 2018.
