We got the time machine out to make the next big thing. It’s a hard tea made the proper way, following the same principles that shaped English Punch in the 16th and 17th centuries.
Back then, as David Wondrich so beautifully charts in Punch: The Delights (and Dangers) of the Flowing Bowl, punch wasn’t the sloppy, technicolour party bowl it eventually became in pop culture. It was structure. It was balance. And at its best, it was a serious, civilised expression of its five core elements: spirit, tea, citrus, sugar, and fruit.
The name itself comes from paansche, the Hindi word for “five” — a quiet reminder that good drinks have rules, and rules (when obeyed properly) set you free.
Tea was included for a reason.
In the age of global trade and the early East India Company, tea offered stability: tannin, dryness, depth — a backbone to keep the drink from sliding into syrup. Rum, meanwhile, was the indulgence. Caribbean rum was new to the English palate, fragrant, bold, and expensive enough to feel a little dangerous. A proper punch was the marriage of the two: the sternness of the tea holding the richness of the rum in place, fruit and citrus providing shape, and sugar smoothing the edges.
We kept those rules.
We start with Appleton Estate Signature, a Caribbean rum with the exact depth and character that made punch a cultural phenomenon in the first place. We steep it in English Breakfast Tea for 17 hours, long enough to extract grip and structure, but not so long that bitterness muscles in. Fresh lemon juice brings a clean line of acidity, all-Australian sugar lifts the natural fruit, and yellow clingstone peach provides the nostalgic, moreish heart of the drink — ripe, bright, sunny, familiar in the best way.
Peach is the flavour of summer for a reason. It tastes like holidays, long afternoons, childhood memories, and the first truly warm day of the year. Clingstone peach in particular is intensely aromatic, slightly fuzzier, and more delectable than its freestone cousins. When blended into a disciplined punch structure, it becomes something quietly irresistible.
Put together, this becomes a modern iced tea with historic discipline: refreshing, clean, structured, and built to be enjoyed without thinking too hard about it.
At 12%, it’s lighter than a glass of wine — deliberately so. This is a drink made to be sessionable: warm afternoons, long lunches, backyard tables, beach eskies, and every scenario where “just one” is never the truth. It has that quiet, dangerous quality where a can disappears faster than you expected, and the next one opens itself. That’s the mark of something made properly.
