魂のこもった醤油造り

四代目の岩本さんは「本物の醤油を造りたい」と言います。岩本さんのいう“本物”とは“魂がこもっていること”。麹造りの3日間は昼夜を問わず見守り続け、蔵人が温度計を睨み、自分の手を入れて温度を確かめ、目で麹の状態を確認する。手に取って香りを確かめ温度を感じ取る…蔵人の五感が熟練センサーに。

蔵人の技術と情熱で“良い麹”を造り上げたら次は自然の力にバトンタッチ。木桶や蔵にたくさんの酵母や微生物が住みついていて、100年近くもの間世代交代を繰り返しながら独自の生態系をつくりあげています。このように魂のこめられた醤油だからこそ、奥深い味わいになるのでしょう。

 


醤油発祥の地和歌山県紀州有田で造られる手造り醤油

世界遺産にも登録される熊野古道を抱く紀伊山地、高野山系から湧き出る良質の水を使うために、この地に蔵を求めたそうです。伝統的な大きな木桶による昔ながらの製法で、北海道産丸大豆と滋賀県産小麦・長崎県の天日塩を使用し2年間じっくり熟成をさせることで、諸味は円熟のうま味をもちそれを搾った醤油は本物の味わいに仕上がります。ピリッとした醤油感が前面に出るコクの強さ、色もしっかり黒く豊かな香りが特徴。

色も香りもしっかりしていて、醤油らしさが前面に出る古式しょうゆの特徴を活かすなら、居酒屋の定番唐揚げやお弁当の定番鶏そぼろ。濃いめの味付けでしっかり醤油の味を楽しんでいただけます。
