To be classified as tequila, the beverage must contain at least 51% Blue Agave. However, producers seeking to create tequila with the fullest flavor use 100% agave and prominently feature the fact on the label. The different categories of tequila - blanco, reposado, and anejo - denote the degree of aging, with blanco being un-aged, and reposados and anejos typically aged in ex-bourbon casks for varying durations, ranging from 2 to 11 months and 1 to 5 years, respectively. Extended aging beyond 5 years can diminish the agave character of the tequila.
