How to prepare Amala

  • Bring 2 cups of water to a rolling boil per 1 cup of elubo flour.
  • Gradually pour in the flour whilst stirring vigorously with a wooden turner to prevent lumps.
  • Reduce heat, cover the pot, and steam for 2 minutes.
  • Uncover and stir again until smooth, dark brown, and elastic in consistency.
  • Serve hot, shaped into balls, alongside ewedu, gbegiri, okra, or your preferred Nigerian soup.

No — they are completely different products. Elubo is made from dried yam peel/skin and produces dark brown Amala. Pounded Yam flour (Poundo Iyan) is made from the white flesh of whole yam tubers and produces white, stretchy Iyan. Amala and Iyan are different swallows traditionally served with different soups.

What gives Amala its dark brown colour?

The characteristic dark colour comes from the yam peel and skin used to make Elubo. The outer layer of the yam tuber, when dried and ground, retains the natural dark pigmentation — this is what distinguishes Amala from the white Iyan made from yam flesh flour.
